::This is my first visit. I didn't know... I'm sorry ┏○ Peco It's a Tsubame-Sanjo style ramen restaurant. (It seems to be called Swallow type) It's Chinese noodles with back fat. I was surprised at how thick the noodles were. Looks like Jiro type... It's quite common, but the back fat is lukewarm and the whole thing is lukewarm...it's common. It's not bad, but it's a bit disappointing...there! I wanted to eat it while saying that. The pork belly is tender and tender ️⭕️ The rock glue on top? There was a lot of it ️⭕️ As the backfat reduces, the soup becomes rich with seafood and tastes like Chinese noodles. I couldn't tell what kind of ramen it was because there was so much back fat on it. It was a soup that went well with black pepper and vinegar. The fried rice is flaky and I don't know what kind of rice it is...Even if it's called tuna flakes rice, I can't tell the difference... It's delicious though. I don't think there will be a next time, but the clerk's greeting was polite and gave me a good impression. It was a pity that there was no meat soba. If I have another chance.

::I stopped by at lunch time, but the chashu pork and rose seaweed toppings were no longer available. I don't know if it was popular or if it wasn't available, but it was disappointing. Speaking of Tsubame Sanjo, it is a shop that sells back fat. In other prefectures, there is a topping called oni fat that even covers the entire bowl with back fat, but this was not the case at this restaurant. When I looked at the reviews, there was a mention of Onizu products, but I couldn't tell if they could be used or not. The ramen I ate didn't feel greasy even though it had back fat on it, and the flavor of the back fat was on top of the ramen and it was delicious. There is a parking space along the building, but it was also used by another store.

::It's Tsubame Sanjo Ramen, but it was arranged into a light ramen that was easy to eat, and it was delicious. The owner works alone, but I was impressed by how carefully he makes each cup. The soup, noodles, and char siu had a good balance. Personally, I was disappointed that there was no garlic.

::Niigata Tsubame Sanjo style ramen. Ordered in backfat. Also, Charlai. It has almost no harsh taste and is easy to eat. The char siu is also creamy and delicious. I would like to try other menu items as well.

::The chef was very friendly, which made me feel comfortable as a foreigner. I had the most popular dish, a fatty broth with soba noodles and pork slices. It was delicious and very filling. I also got a big bottle of beer and was given some Japanese salty snacks for free as a pairing. Overall great experience and I hope one day to visit Akita again and eat here!
