At this time, the place was about 80% full and surprisingly crowded. Umaya has many stores in the prefecture, but it has been about 10 years since I visited this store. The soup I received at that time was clearly different from other stores, so I stopped going there for a while. This time, it was the same as other stores, and I was satisfied with the "pork taste" that Umaya claims. There is a good balance between the flavor of the pork bones and the crunchy texture, and the chive mustard on the table adds a different flavor and enhances the flavor. You can get green onions for free, but the good thing is that they are served on a plate when you order. Instead of adding everything from the beginning, add it in the middle so you can enjoy the crunchy texture until the end. A guilty pleasure to have late at night, it was delicious.
