::I discovered Tosaya on my way to work in Sanjo City. The place used to be Hinode Seimen. Since Nagaoka ginger soy sauce is available in Sanjo City, I decided to stop by. A simple menu with soy sauce, salt, miso, and whether or not to add backfat. A system to purchase from a ticket vending machine. I like the noodles to be dark and hard, and I like the added ginger, so please ask when ordering. When it is served, the aroma of ginger will whet your appetite. I also like the firmer char siu. Spinach also goes well with a thick soup. Rice is also a must. As expected, Tosaya was delicious.

::Tosaya moved from Little Town across from Direx in Sanjo City. I was surprised when I entered the store without noticing it at first. Ginger soy sauce ramen costs 900 yen, and the strong ginger flavor and medium-thick noodles that look like homemade noodles are delicious. Personally, I think the small bowls and large servings cost 160 yen, which is expensive, so I think the repeat rate will be low.

::I moved on September 15, 2024. 3-20-1 Kono, Sanjo City, Niigata Prefecture This is where the Hinode Seimen Sanjo Factory used to be. At the new location, we still don't have the full menu like before. On the 17th, I had the salted back fat ramen. Ginger flavor + salt + backfat. I was betrayed in a good way. The sweetness and the richness of the salty backfat was new to me, and it was refreshing. The medium-thin straight noodles have a good balance between the noodles and the soup. Next time I would like to try the miso backfat ramen.

::Thick backfat miso noodles and spicy balls. It was quite rich and delicious. There's a little bit of ginger and it's delicious, and you can also get extra ginger for free, which makes the ginger even stronger. It's even better to have garlic on the table. No complaints. When I went to the Miyauchi branch a long time ago, I didn't really like it, but maybe the Sanjo branch was better, or maybe my taste has changed, but it was delicious.
