Ingredients include oysters, pork shoulder roast, white onions, green onions, and shimeji mushrooms. Today's oysters include a lot of non-broken oysters, which makes me excited. The dipping sauce has a great balance of flavor from the oysters, the sweet and salty soy sauce flavor, and the accent from the yuzu oil. The flat, medium-thin straight noodles with added water have a rich wheat flavor, and are smooth and chewy, so you can enjoy the contrast in texture with the juicy oysters.
