    Today I went to Yoshika, a famous restaurant in Urawa that I had wanted to go to for a while. It's only open for lunch on weekends, so I had a hard time getting a reservation and missed going. First up is octopus and scallops from Akashi. The octopus is very soft, so I wonder if it's due to the difference in pasteurization. It's insanely soft. Akashi's boiled octopus becomes soft when it's cooked, but I wonder why. The scallops are delicious as sashimi with a little salt and a squeeze of lemon. I don't have the actual photo because I ate it first. Next was bonito topped with dashi from Yamagata Prefecture. This is also delicious without the smell of bonito or blood. And then there was the mantis shrimp, which I was a little weak at. There is no odor at all. And obviously a side dish. Hokota's thinned melon pickled in rice bran, firefly squid from Toyama, nanban pickled yellowtail from Okayama Prefecture, octopus eggs, and rich tofu. This octopus egg has a rich taste like hard cheese. It's insanely delicious Next was a date roll of conger conger, served with sakura shrimp. Everything up to this point will be snacks. The first sushi items were a handful of white squid from Tottori Prefecture, Botan shrimp and amberjack from Hokkaido, mackerel from the Goto Islands, red bluefin tuna from Ofunato, medium fatty bluefin tuna from Shiogama, and medium aged bluefin tuna from Ofunato. We will continue with fatty tuna, sea urchin from Rishiri Island (probably Bafun sea urchin), white fish from Toyama, and sushi toppings. Finally, close with Shimiji juice. All the ingredients were made with care and the taste was completely different. It was delicious By the way, is this 4,400 yen a deficit? I will think…! ️

    Authentic Edomae sushi run by a chef who trained at a famous restaurant in Tokyo I was surprised that such delicious sushi could be eaten in Urawa, Saitama, a prefecture without a sea. The sushi in the nigiri is generally small and easy to eat. A personal big hit is the amaebi. Very rich and sweet! The general's story was fun, and I was very satisfied with the shop!
