I visited around 11:30 on a weekday and was seated without waiting, but it started to get crowded after 12:00, so it might be a good idea to make a reservation. Last time, I went to lunch on a weekday without a reservation, and I couldn't get in because the restaurant was reserved. It seems to be often used by groups of tourists sightseeing in Yamagata.
