::It was my favorite shop. The delicate work is conveyed. The way the knife is inserted is also very nice.

::I think the sushi made by the quiet chef is definitely the best in Niigata. I was especially impressed by the ground mackerel that was caught solo. Each and every nigiri item is delicious, and the dishes served between nigiri are also truly delicious. All of the dishes were made according to the words of the owner, who is very particular about the ingredients he buys. The quiet atmosphere inside the store was also nice.

::I've been to many sushi restaurants, but this one was the best and the most delicious. The general's skill and the proprietress's consideration were wonderful.

::【Features】 Sushi Shop 【thoughts】 ・Old-fashioned sushi restaurant ・The carefully prepared Edomae-style sushi is exquisite. ・A store you must visit when you go to Niigata ・A restaurant where you can concentrate on the taste of sushi that is rare these days Yukiya's Prawns (Niigata City, Niigata Prefecture) The sweet and rich flavor exploded like fireworks. My mouth turned into an out-of-season Sumida River fireworks display. In Niigata in late autumn when it gets chilly. I sit at the counter of a sushi restaurant with my junior colleagues and share a drink. First, let's toast with Niigata's local beer. We get excited by a story about a salesman who eats sashimi of salmon and mackerel as an appetizer. I might be called uncool over drinks, but I had decided to talk about work that day. In order to praise the work of juniors, exceptionally delicious sake and snacks are essential. While chewing on the crunchy surf clams, I looked at the menu while enjoying Niigata sake. Oh? There is no Niigata brand of sake that everyone knows. When I asked the shop owner why, he said, "We have sake to enhance the deliciousness of the sushi." That's what I said. I couldn't help but groan at the owner's strategy of aiming for 120 points for the main dish, sushi, instead of trying to get 100 points for sake. The sushi started with horse mackerel, but the next dish, ``Nodoguro'', completely stunned me. delicious! delicious! He was having fun with his juniors like a child. The boiled clam nigiri served like ochazuke had no odor at all, even though the soup stock was cold. I was particularly surprised by the tiger prawns. I quickly stirred up some cold sake and popped it into my mouth. Yes, that's fine. THIS IS THE prawn! The flavor overflows from the rich miso and the unique firm flesh of crustaceans. It mixes with the faint flavor of sake on your tongue. Also, my ranking of delicious food suddenly changed. Edomae spirit is put into each piece of sushi, each roll, each piece. A technique that pursues delicious food, reveals customers' needs, and invites them beyond their imagination. I think it's similar to that of a salesperson. I vowed that I would continue to visit Niigata on business trips. Thank you for the meal.
