This is a restaurant run by Nobuo Ogawa, a ``soba master'' where prior research is the key to success. One of the restaurants I've wanted to go to for a long time, but kept putting off because it was far away is Jikyuan. The owner, Nobuo Ogawa, is famous as a soba master and has been featured in numerous media outlets. When he turned 30, he began training in soba at the famous soba restaurant ``Honmura-an,'' which just celebrated its 100th anniversary this year, and opened ``Jikyu-an'' in Asagaya just before he turned 40. After that, he moved to his hometown, Hitachiota City, Ibaraki Prefecture, and reopened his current location, ``Jikyuan.'' He cultivated his own buckwheat noodles using slash-and-burn farming, harvested them by hand, dried them in the sun, and made his own powder using a stone mill. The interior and exterior of the store, which is both retro and modern and has been renovated to give it a stylish look, shows how much soul they put into making soba. The store opens at 11:30, so I planned to arrive 30 minutes before opening, but I arrived at the parking lot at 11:20. There are already about 8 cars from outside the prefecture parked there, and I'm surprised at how popular it is despite being in a fairly rural area. By the way, the shop is located 750 meters before the Ryujin Suspension Bridge, a tourist spot in Ibaraki Prefecture that is famous for its 100 meter high bungee jump, and a 3 minute drive away. When I entered the restaurant, it appeared that the previous customers had already started eating and the restaurant did not open at 11:30. I should have arrived at 11am after all. While waiting to register on the waiting board, I took a short walk outside the store and enjoyed the indescribably pleasant exterior and nature. I waited for about 30 minutes and went into the store. My order was a large serving of ``Scallion tempura''. The portions of soba noodles at famous restaurants are small, so a large portion is a must. ``Scallion tempura'' is 1,800 yen and a large size is 600 yen, for a total of 2,400 yen. Well, I guess it's something like this. I also ordered "Homemade Sashimi Konnyaku". "Negi Tenseiro" was served in about 30 minutes, and we started with the green onion. These green onions are wild green onions, and when you add a little salt from Australia, which has a high salt concentration, they are coated with a crunchy coating and have a sweet taste. The green onion tempura is really delicious. Soba is a very bland food, so the wild onion tempura, which has a lot of oil and is a bit oily, adds a satisfying texture. The most important soba is 9.50% soba. Each soba is filled with grains of buckwheat flour, giving you the aroma and texture of soba, and when you bite into it, you can feel the deliciousness of the flavorful soba. "Gamasho" in Jingumae, which has received one Michelin star for nine consecutive years, used to order soba from "Jikyuan", so I wonder how good the soba is made. After finishing our meal and watching many people bungee jumping at the Ryujin Suspension Bridge, which is a 3-minute drive away, we headed to Ibaraki Prefecture's number one tourist spot, which is about a 30-minute drive away. To Fukuroda Falls. The standard route seems to be to visit these three places: Jikuan, Ryujin Suspension Bridge, and Fukuroda Falls. It's very difficult to access and you can only go by car, so you'll need to be prepared to visit, but after visiting, you'll be glad you went. The reason why not many locals have been there is because of its accessibility and the fact that it's a popular restaurant, but I think it's worth a visit, so be sure to research the route, travel time, and arrival time before you go. I strongly recommend that. It was a good shop.
