  I ordered a large sea bream to be prepared for sashimi, and when I took it home and opened it, I looked at it. I was surprised at how thin the fence part was, and when I looked at it... Thick flesh remains on the spine, and there is no sign of scales on the skin. Normally, fishmongers will remove the skin and then grate it in three pieces. I would do it carefully so as not to leave even the slightest bit of body on my spine. . . The previous Challenger had three beautiful pieces. I was really disappointed this time. I no longer order fish prepared at this restaurant.
